Our producer system
Because raising cattle and the seasonal grazing methods they are raised are calendar-based and differ from farm to farm, BIODIVERSITY BEEF will offer products from specific producers as timed with their operations. With the extra demand on processing facilities by COVID-19, we hope to pre-order as much of our beef as possible so that we can best serve our customers and benefit our producers. We use Cut-Rite Meats, Carberry Mb as our butcher/processor.
Our prices
Our prices will vary with market variations. We believe we are providing great products to our customers with the transparent intentions of promoting and merging the great work and value of our beef producers with the conservation minds of our customers. We cannot be a wholesale operation and we will not apologize for any of our prices.
Beef Sections
Your quarter of beef basically is comprised of the cuts of beef weight of the fully processed animal split four ways to represent four quarters of beef from the front and back areas; two each location. At BIODIVERSITY BEEF, when you buy one quarter we will do our best to mix and match you with another quarter purchaser in the same order to help select the widest number of cuts. With some steaks and roasts, there are only so many cuts available per animal and the size of your steaks and roasts preferences can influence quantity. We also have secured the butcher to help guide your selections as you fill out/submit our form.
Front of cow: Prime Rib/Ribeye, Blade Steak/Roast, Cross Rib Roast, Ribs, Ground Beef
Rear of Cow: Porterhouse, T-Bone, Wing, Flank Steak, Round steak (option), Eye of Round Steak/roast, Outside Round Roast, Inside Roast

Hamburger
With your quarter, you have the opportunity of getting some of the ground beef made into 5 oz or 8 oz patties at an additional cost. Let us know if this interests you.
Juicy Steaks
With your quarter, you can choose from different types of steaks such as prime rib, sirloin, new york, flank and more.
Roasts
With your quarter beef, you can choose between different types of roasts such as chuck, sirloin, rib and round roasts.
Sausages & Beef Jerky
With your quarter beef, you can have sausages & beef jerky made to order.
